Cornish
New Potatoes Supper Surprise(using up the cold potatoes left over).
Lightly fry a
little onion, mushroom and bacon in a pan and drop in diced cold
cooked potatoes. Serve on a bed of lettuce and top with grated cheese.
New
Potato Salad
Warm New Potatoes are delicious served with a dressing made
from 1 tbsp wholegrain mustard, 2 tsp olive oil, 1 tbsp white wine
vinegar, 1 tbsp mayonnaise, 2 tsp honey and spring onions, season
with pepper and salt.
Tuna
and New Potatoes:
Cook
potatoes in water as above. Make a white sauce and stir in tuna,
sweet corn and parsley. Place half the potatoes diced in bottom
of dish cover with white sauce mixture, and put the remaining potatoes
on the top. Sprinkle with cheese and cook under grill or in the
oven.

Potato and Onion
Heat some oil in a frying pan, add sliced potatoes, and onions and
fry until cooked. Serve as a side dish to your favourite meal.

new Potatoes and Chicken Stirfry Supper
Heat oil in heavy pan and cook diced chicken, add diced celery (stick),diced
carrot,cooked new potatoes,salt and pepper, thyme, and diced apple.
When these are nearly cooked add 2 tablespoons plain flour and 400
ml cider and serve with a side salad.
Marinade
Chicken and Potato Salad
Combine 1 tbsp red wine vinegar,3 tsp honey,4 tbsp wine, salt
and pepper and stir in the diced breast of chicken to marinade.
Meanwhile cook 500g Cornish new potatoes in boiling salted water
for 15 mts. Drain. Prepare salad of tomates, cucumber, watercress
and lettuce. Stir fry the chicken for 8-10 mts. Mix salad, new potatoes,
chicken in a bowl and serve immediately. Enjoy the flavour of new
potatoes with a hint of sweetness to compliment the chicken.
Barbecued
New Potatoes:
Cook the new potatoes as above in salted water. Drain. Thread the
potatoes, sausages,mushrooms onto a skewer and grill on the barbecue.
New
Potato Bake:
Cook the new potatoes as above.
Heat oil in a large pan and add an onion and garlic and gently soften.
Add some peppers, courgettes, and fry for about 7 mts, stir in tomato
puree, red wine, herbs and seasoning and simmer for 5 mts. Put in
an ovenproof dish, top with cooked new potatoes, sprinkle with grated
cheese and cook for about 15 - 20 mts until brown.
